Walnut and Almond Loaf

This recipe may not really taste like meatloaf (actually, many would say that it tastes far better), but it’s a wonderfully hearty main course which is bursting with not only the nutritional benefits of walnuts, but also flavor. The Moroccan-inspired taste of this dish provides a little something different at your dinner table that will be sure to make this superfood-laden dish a hit.

Number of servings: 8

Ingredients:

1 cup chopped walnuts

½ cup finely chopped almonds

½ cup finely chopped cashews

½ cup whole wheat bread crumbs

1 ½ cups cooked brown rice, cooled to room temperature

2 large eggs, beaten

1 large yellow onion, diced small

¾ cup fresh mozzarella, sliced thin

¼ cup black olives, pitted and finely chopped

1/3 cup vegetable stock

2 tbsp chopped cilantro

1 tsp fennel seeds

1 tbsp extra virgin olive oil

salt and black pepper, to taste
